Dr. Dave’s Garlic Broccoli Chicken and Peppers
Dr. Dave here with a one-dish meal that will fill you up & boost you up! With more than your daily need of vitamin C from the Peppers and Broccoli, you necessarily don’t need the garlic to help boost your immune system but it’s so good for you, we added it anyway!
Servings: 6
Ingredients
- 4 cups fresh broccoli florets
- 1 medium sweet red pepper julienned
- 1 medium sweet yellow pepper julienned
- 1 ½ lb Skinless boneless chicken breast cut into small pieces
- 2 tablespoon olive oil
- 3 clove garlic minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium ripe tomato cut into wedges and seeded
- 1 tablespoon grated Parmesan cheese
Instructions
- In a large saucepan, bring 6 cups water to a boil.
- Add broccoli; cook, uncovered, 3 minutes.
- Drain and immediately place broccoli in ice water.
- Drain and pat dry.
- In a large nonstick skillet, saute peppers on medium heat in 1 tablespoon of oil for 3 minutes or until crisp-tender.
- Add the broccoli, garlic, oregano, salt, and pepper; cook 2 minutes longer.
- Set aside.
- Heat remaining 1 tablespoon of oil over medium-high heat and cook and stir chicken until meat is no longer pink in the center, about 5 minutes.
- Stir in vegetables; continue to cook and stir for 2 to 3 minutes more.
- Add the tomato; heat thoroughly.
- Sprinkle with cheese and enjoy!
