Sweet and Spicy Edamame

Sweet and Spicy Edamame
This is a great pick-me-up for your afternoon snack. A little bit sweet and a little bit spicy. These protein packed pods will not disappoint!
Servings: 4 servings
Ingredients
- 2 cups water
- 1/2 tsp stevia sweetener
- 10 drops clear-flavored liquid stevia sweetener
- 4 1/2 cups frozen edamame pods
- 1 tbsp soy sauce low sodium
- 2 tsp Sriracha hot sauce
- 1 tsp toasted sesame oil
- 1 tsp peeled ginger root grated
- 1 medium garlic clove minced
- 1/8 tsp black pepper
- 1 tbsp sesame seeds plus 1 tsp
- 1 tbsp plain rice vinegar
Instructions
- Put the water, stevia sweetener, and liquid stevia sweetener in a medium saucepan. Stir together. Bring to a boil over high heat, stirring occasionally. Stir in the edamame. Cook for 3 to 5 minutes, or until tender, stirring occasionally. Drain the edamame in a colander, discarding the water mixture. Set aside.
- In the same saucepan, heat the soy sauce, rice vinegar, Sriracha, sesame oil, gingerroot, garlic, and pepper over low heat for 1 to 2 minutes, stirring occasionally. Add the edamame, tossing to coat.
- Sprinkle the sesame seeds over the edamame.
